Teppanyaki is the ultimate form of expression of cooking, where chefs can express themselves through their food, character, movements, and tricks. The most important thing for Teppan chefs is to understand what the customers like to see, such as fire, tricks, knives, and good food. The connections that chefs make with their customers are more important than the tricks they do. Tattoo Mike uses organic ingredients and works with local markets to procure his ingredients.
